This kind of easy-drinking sparkler is known simply as 'Les Bulles' (bubbles) when referring to a non-Champagne traditional sparkler. Mathieu Tijou, formerly of Domaine Soucherie where he worked with his parents, established Eperonniere and began making wine as of 2007. And if he takes as much care with his wine as he did with renovating the medieval property, then you can expect spectacular flavor. This vintage Cremant is a blend of primarily Chenin Blanc complemented by Chardonnay and Cab Franc, aged sur lattes for up to three years.
Medium-bodied, dry, fizzy. A wonderfully floral mousse with pear, apple, white rose, and wisteria notes. A light dosage balances acids and softens the bubbly. This 12% abv Cremant is the fruitier lusher style which can be enjoyed all day.
